Cu Khe
Cellophane noodles is a traditional dish, familiar to almost every Vietnamese person. From cellophane noodles, one can make many popular delicacies by combining it with eel, pork or other ingredients. And when it comes to cellophane noodles, one must mention Cu Da village in Cu Khe commune, Thanh Oai district, Hanoi. This is one of the largest noodle-making villages in the North.

The tradition originally started from 60-70 years ago where people had to make noodles to sustain themselves. After some time, the villagers decided to use their own recipe to produce and sell cellophane noodles. The golden noodles, as well as the smooth white ones, are dried everywhere in the village, from the roof, the walls… to any surface that one can find.

After operating for around seven decades, the Cu Da still holds its reputation as one of the best cellophane noodle-making villages. More noticeably, CNN also did a short documentary on the people here to portray their dedication for this tradition.
